Shrimp Fried Rice
Shrimp fried rice is my “I don’t know what to cook but I still want to act like I have my life together” meal. It’s quick, it’s cozy, and it always tastes like I tried way harder than I did. Plus, anything with shrimp automatically feels a little fancy, even if I’m still in pajamas.

Ingredients
avocado oil
2 garlic cloves, minced
2 tbsp diced onions
2 tbsp broccoli
10 extra large shrimp, peeled and cleaned
2 eggs, whisked
2 cups long grain rice, cooked and cooled
2 tsp oyster sauce
2 tsp soy sauce
1/2 tsp sesame oil
1/2 tsp chicken bouillon
1/4 tsp sugar
black pepper, to taste
green onions, chopped
Instructions
Heat avocado oil in a pan over medium heat.
Add the minced garlic and cook until fragrant.
Mix in the diced onions and broccoli.
Cook until the vegetables begin to soften.
Add the shrimp and cook until they are slightly pink.
Push everything to the side and scramble the eggs in the same pan.
Add the cooked long grain rice and mix everything together.
Add oyster sauce, soy sauce, sesame oil, chicken bouillon, and sugar.
Season with black pepper.
Add green onions and stir fry until everything is well combined.
Notes/Tips
Use day old rice for the best texture.
Add extra veggies like carrots, peas, or corn for more color.
Swap shrimp for chicken, beef, or tofu.
Add a little more sesame oil at the end for extra flavor.
For heat, mix in chili flakes or a dash of sriracha.
